Recipe: Elderflower Jelly

Makes 4 jellies.

Combine 1/4 of a pint of good quality elderflower cordial with 3/4 pint of water.

Soak 4 gelatin leaves in cold water until soft.

In a small pan heat half of the cordial mix.

Remove the gelatin leaves and dissolve the liquid in the warm cordial mixture. Then add this to the cold cordial mixture.

Pour into moulds or glasses.  Set for 3-4 hours in the fridge.

Serve with any of the following:
Gooseberries and vanilla ice cream
Shortbread crumbs and any selection of summer fruits
Smashed ginger nuts
